A hint of Chipotle and the sweetness of the hibiscus marry beautifully in this easy recipe!

1 1/2 pounds assorted chicken pieces, cleaned and dried
¼ cup olive oil
¼ cup white wine
1 Tablespoon Hibiscus Spice Blend
Salt and pepper to taste
- In a zip top bag or large bowl, combine all ingredients and mix well. Add chicken, massaging marinade thoroughly into pieces. Marinate in the refrigerator for as little as 30 minutes or up to 24 hours if preparing in advance. Choose your cooking method: Stove top in a heavy bottomed pan over medium heat, in a 400° oven, or on the outdoor grill until fully cooked through.
Variations: Try substituting salmon or other fish for the chicken.
