1 1/2 pounds assorted chicken pieces, cleaned and dried
¼ cup cooking oil
3 tablespoons lemon juice
2 cloves garlic, minced
- In a zip top bag or large bowl, combine all ingredients, massaging spices into your choice of protein. Marinate in the refrigerator for as little as 30 minutes or up to 24 hours if preparing in advance.
- Choose your cooking method: Stove top in a heavy bottomed pan over medium heat, in a 400° oven, or on the outdoor grill until fully cooked through.
Variations: You may successfully substitute a whole chicken, or make smaller pieces into kebabs.
