Saffron-Rose Blend Marinated Kebabs
Serves 4-6
It's a summer evening, you have some chicken, lamb, or yummy veggies in the fridge, but no idea what to do with them. Well, pour a glass of wine, fire up the grill, and make this recipe. Let the aroma of your masterpiece skewers fill the air as you enjoy your time in the outdoors.
Prep time: 10 minutes Marinate time: 30 mins Cook time: 10-25 minutes
1 1/2 pounds protein, such as chicken or lamb; cleaned, dried, cut into 11/2” cubes
1 1/2 pounds vegetables such as onions, zucchini, bell peppers, washed and trimmed
2 tablespoons plain yogurt
2 tablespoons lemon juice
¼ cup olive oil
1 tablespoon Saffron-Rose Blend
Salt and pepper to taste
- In a zip top bag or large bowl, combine all ingredients, massaging spices into the protein and veggies. Marinate in the refrigerator for as little as 30 minutes or up to 24 hours if preparing in advance.
- Prepare an outdoor grill to medium-high heat and brush with oil.
- Thread protein and vegetables onto either metal or pre-soaked wooden skewers. Reserve leftover marinade
- Grill skewers on each side brushing with reserved marinade until cooked through.
Variations: Instead of Kebabs, make Skewers by cutting proteins into 6” strips and thread onto skewers as above and serve over rice or grains.
Mushrooms, especially Portobellos, are a great vegan option.
