Saffron-Rose Tagine

Serves 4-6

 A Tagine is both the meal and the vessel used to cook it. Here the Saffron-Rose Spice Blend highlights the vibrant ingredients in this exotic, but approachable, combination of flavors that make up our version of this dish. Plus, the rose petals add unexpected color!

Prep time: 25 minutes                                 Cook time: 1 hour

1 1/2 pounds assorted chicken pieces, cleaned and dried 

4 Tablespoons olive oil

2 Tablespoons Saffron-Rose spice Blend

2 tablespoons fresh ginger, grated

1 large onion, sliced

3 cloves garlic, minced

½ pound butternut squash, cubed

¾ cup chopped dates, figs, apricots, or golden raisins

14 ounce can garbanzo beans, rinsed

¾ cup green olives, coarsely chopped

½ cup can chopped tomatoes

2 ½ cups chicken stock

Salt and pepper to taste

  • Preheat oven to 385 °.
  • Toss chicken in a medium bowl with 2 tablespoons olive oil, 1 tablespoon Spice Blend, and ginger.
  • Over medium-high heat, add 1 tablespoon olive oil to a large heavy-bottomed skillet. Add chicken and sauté to create a light golden crust for about 5 minutes per side. Add remaining olive oil, then the onions, garlic, and butternut until lightly caramelized, about 10-12 minutes. Reduce heat to medium and add dried fruit, garbanzos, olives, remaining Spice blend, and tomatoes—stir to incorporate all ingredients and any browned bits on the bottom of the skillet. Season with salt and pepper to taste.
  • Transfer all ingredients to the Tagine—alternatively, you may use an oven-safe dish with lid or a Dutch oven-- and pour chicken stock over all. Cover with lid and cook uninterrupted for 1 hour in the oven. If you are not using a Tagine to cook with, proceed in the same cook pot.
  • Serve Tagine atop fluffy cous-cous.

Variations: Although this recipe calls for chicken, you may successfully substitute lamb, beef, or plant-based protein, and vegetable stock may be substituted for chicken stock
